If you have not had a plate of Edikang Ikong soup served with boiled yam, garri or foo-foo (boiled cassava flour) then your trip to Uyo is yet to be complete. It is a soup of sliced pumpkin and water leaves with a rich variety of seafood and meat with other important ingredients like smoked fish, crayfish, pepper, palm oil, meat, salt and little water. It is best eaten with your hands well washed.
This soup will make you stop wondering why the skin of an average Uyo person is plump and fresh. Don’t leave Uyo until you have had a plate of Afang Soup prepared from shredded ‘afang’ and waterleaves with ingredients like smoked fish, meat, crayfish, salt, pepper, palm oil, and stockfish with served with foo-foo, pounded yam, garri (toasted cassava flour).
You will experience traditional Uyo over this cuisine. Prepared from oil palm fruit and leaves and condiments like, smoked fish, meat, seafood like periwinkle, stockfish, crayfish, pepper and salt served with boiled yam, plantain, foo-foo, pounded yam, garri or rice makes finger licking acceptable in Uyo.
When you get served a plate of Ekpang Nkwukwo prepared from cocoyam, water yam, and cocoyam leaves with ingredients like pepper, salt, palm oil, crayfish, maggi, fish, periwinkle and other recipes, don’t ask what motivated such ingenious delicacy, just sit back and savour every mouth full of it.

You will certainly ask for a plate of Afia Efere Ebot especially on cold evening as the combination of spices prepared with goat meat, smoked fish and stockfish bring will warm you up.
